Viticulture

From a sub-denomination covering a very restricted area of vineyards located in the township of Valdobbiadene and situated among the steepest hills of S. Stefano and Saccol. Vineyards are located in a tiny amphitheatre built of marl, sandstone and clay soil that has lead to Glera grapes achieving full maturation and which, moreover, guarantees a concentration of unusual aromas.

Vinification

Grapes are harvested from mid-September until mid-October, slightly late. They are then gently pressed, and the must is allowed to ferment at a controlled temperature without the marc. The accumulated foam is removed. Re-fermentation takes place in closed stainless steel vats (adopting the charmat method), at a controlled temperature, for approximately 30 days.
