Viticulture

Selected from the lowest-yielding vines in the best vineyards of the Valtellina Superiore DOCG zone, including: Berbenno, Sondrio and Montagna in Valtellina. Vineyards are south-facingat elevations between 350 - 500 m.asl. Soil is predominantly sandy (80%), with some lime (20%). Vines are guyot-trained.

Vinification

Harvested in early/mid October, when the grape bunches are carefully laid in perforated fruit trays, then hung up on appassimento racks until mid December. Grapes are then gently destemmed and crushed, before being transferred to stainless steel tanks for 15 days to ferment at a controlled temperature of 25ÂșC. Aged in oak for circa 15 months. Fined in the bottle for 10 months before commercial release.
