Viticulture

Located in a natural amphitheatre with an ideal microclimate for grape growing - warm, dry with significant temperature contrasts between day and night. Cultivated organically, the vines are fertilized using manure (from winery's own herd) and vine clippings.

Vinification

The winery's new cellar has been constructed on descending levels to benefit from gravity in the refining process. Vinification is carried out in stainless steel tanks or large wooden casks and ageing takes place in a combination of oak casks and French oak barriques.
