Viticulture

Selected from the lowest-yielding vines in the best vineyards of the Valtellina Superiore DOCG zone, Sassella and Grumello. Vineyards are guyot-trained, planted at altitudes ranging between 350 - 500 m.asl. Soil is predominantly sandy (80%), with some lime (20%). 4,000 vines per ha. Vineyards are south-facing.

Vinification

Harvested in early/mid October, when the grape bunches are carefully laid in perforated fruit trays. Grapes are then gently destemmed and crushed, before being transferred to stainless steel tanks for 22 days to ferment at a controlled temperature of 25ÂșC. Aged in oak for approximately 18 months. Fined in the bottle for 10 months before commerical release.
